The restaurant’s name means “kitchen for special guests,” offering a unique dining experience with its Omakase-style dishes, where guests entrust the menu selection to the masterful hands of the chef, a tradition in Japanese culture.
Chef Yusuke Sasaki, known for his experience at prestigious restaurants in Okinawa and stints in Japan, Germany, and Switzerland, brings his culinary expertise to the Dolder Grand hotel. Guests at the hotel can enjoy a unique take on kappo-style sushi, using seasonal ingredients such as king crab, scallops, and wagyu beef prepared right in front of them at the counter for a fully immersive culinary experience.
“Dinner at Mikuriya is an evening-long event,” says Sasaki, who hails from Yokohama. “The 18-course meal I prepare is all about one word – omakase. ‘Omakase’ comes from the verb ‘makaseru’, which literally means ‘trust’, and is figuratively translated as ‘I’ll leave it up to you’. This term is used when the guest lets the chef decide what food to serve. It’s a style of cuisine revered in Japanese culture and arouses curiosity.”
At Mikuriya, guests can expect a memorable culinary experience as the chef enjoys engaging with them and sharing the inspiration behind the dishes while showcasing his innovative and artistic talents. Fresh ingredients such as eggs, fish, and meat are expertly prepared in kappo-style sushi right before the guests’ eyes, and the chef may even share a few secrets of Japanese cuisine. To complement the meal, guests can choose from a selection of sake, shochu, or Japanese drinks, all of which pair perfectly with the dishes. The chef notes that rice beverage, in particular, has a lower acidity than grapes but offers a rich umami flavour that enhances the overall taste of the food. The restaurant, located on the fourth floor, is open from Tuesday to Saturday from 7:00 p.m. and can seat up to eight booked guests at a time.
With the new Japanese adventure at the Dolder Grand hotel, guests can embark on a culinary journey featuring three restaurants, seasonal pop-ups, and a gourmet festival. The Restaurant has earned 2 Michelin stars and 19 Gault Millau points, while Saltz offers local influences and 14 Gault Millau points. At the same time, Canvas Bar and Lounge are also available to hotel guests and the public.
